lactic acid bacteria

Lactic acid bacteria are among the most important groups of microorganisms used in food fermentations. Among genera of LAB, both Lactobacillus (hereto- and homo-lactic) is the most dominant genus in fermented foods, mostly followed by the species of Pediococcus. Science and Technology (see ‘Further Reading’). Production includes both artificial synthesis as well as natural sources. This trait has, throughout history, linked LAB with food fermentations, as acidification inhibits the growth of spoilage ag… Lactic acid bacteria have a very limited capacity to synthesize amino acids using inorganic nitrogen sources. Within each genus, classical division of LABs into species relies heavily on carbohydrate fermentation profiles and some other simple physiological tests such as growth at particular temperatures and tolerance of salt and extremes of pH. Low-resolution dendrogram showing phylogenetic relationships between bacteria of the high- and low-G+C subdivisions of the Gram-positive division, based primarily on 16S rRNA sequence data.

Lactic acid bacteria are found in fermented foods like yogurt and cheese. However, studies on yogurt have also contributed significantly. Fermented foods are less perishable than the original raw materials, their nutritional value may be enhanced, and the safety of these foods may be improved due to the inhibition of pathogenic bacteria by the low pH and the presence of organic acids and antimicrobial compounds.

This reduces acidity and results in a smoother tasting wine. Figure 2.

LAB were amongst the very first bacteria studied. They contribute to the taste and texture of fermented products and inhibit food spoilage bacteria by producing growth-inhibiting substances and large amounts of lactic acid. Microbiology and Functional Aspects, 2nd edn.

The physical and chemical characteristics, the antimicrobial mechanisms and the stability of the compounds when added to a food product must be determined. The use of codY seems to be unique to lactococci. ScienceDirect ® is a registered trademark of Elsevier B.V. ScienceDirect ® is a registered trademark of Elsevier B.V. LAB have a reputation of being ‘generally recognized as safe’ (GRAS). Wilkinson, in Encyclopedia of Dairy Sciences (Second Edition), 2011.

It is worth noting that enology also provides insights into the diversity of flavor compound formation by LAB, insights that, aspirationally, could be applied to dairy fermentations targeted to the generation of novel all-dairy flavor ingredients, rather than traditional dairy products. Configuration of lactic acid produced from glucose. Food-grade lactic acid bacteria that are used as preservatives must be able to survive freezing, drying, and storage conditions. LAB genera isolated from various fermented foods are Lactobacillus, Pediococcus, Enterococcus, Lactococcus, Leuconostoc, Oenococcus, Streptococcus, Tetragenococcus, Carnobacterium, Vagococcus, Weissella, and Alkalibacterium. Walker, in Encyclopedia of Food Microbiology (Second Edition), 2014. Figure 2 shows a schematic, unrooted phylogenetic tree of the lactic acid bacteria.
An example of the beneficial aspects is the malolactic fermentation that occurs after the main yeast fermentation and results in the decarboxylation of l-malic acid to l-lactic acid, catalyzed by the malolactic enzyme in LAB. Despite the beneficial status of LAB, some psychrotrophic species may cause detrimental effects in packaged foods.

However, molecular biological techniques alone have the disadvantage that they give no information concerning the properties of the organisms under study. So far, not one genotyping method has achieved universal acceptance but these methods are gradually partially replacing the traditional characterization tests. Reproduced from Axelsson L (1998) Lactic acid bacteria: classification and physiology. B.C. Typical LAB are nonsporing and nonrespiring, aero- and acid tolerant, and fastidious. Ideally, the bacteria should be fast-growing, bacteriophage resistant, salt-tolerant, and genetically stable. An overview of traditional and novel applications of these fascinating bacteria is presented. In 1873, Joseph Lister isolated the first bacterial pure culture which he called Bacterium lactis. Differential characteristics of lactic acid bacteriaa. It is white in solid state and it is miscible with water.

The lactic acid bacteria are a group of Gram-positive bacteria, non-respiring non-spore-forming, cocci or rods, which produce lactic acid as the major end product of the fermentation of carbohydrates. Morphologically, they are cocci, coccobacilli, or rods and, with the exception of the tetrad-forming genera Aerococcus, Pediococcus, and Tetragenococcus, chain formation is common. In addition, citric acid and many other wine substrates are metabolized into compounds that contribute to the final flavors and aromas. This lactic acid bacterium is now called Lactococcus lactis and is used for fermenting milk to produce hundreds of different dairy products. Such variations bring substantial complexity and challenges to understanding the entire stress response of LAB. LAB are only weakly proteolytic and lipolytic, which is also important since breakdown products from protein and fat are often organoleptically unpleasant in high concentrations.

Examples of these are the production of cheese and other fermented dairy products, fermented sausages such as salami, and fermented cabbage – sauerkraut. Additionally, some species of lactic acid bacteria will grow well at refrigeration temperatures in conditions of reduced oxygen that inhibits many of the competing spoilage bacteria. (See CHEESES | Starter Cultures Employed in Cheese-making; FERMENTED MILKS | Types of Fermented Milks; YOGURT | The Product and its Manufacture. The book Improving the Flavor of Cheese edited by Weimer (see ‘Further Reading’) covers flavor formation in cheese extremely well and refers extensively to the role of LAB, while information on LAB-directed flavor formation in yogurt is described within the book Tamime and Robinson’s Yogurt.
